Time on lees has helped create a soft and creamy texture to the wine with an essence of baked custard tart. The framework is very airy with present but integrated tannins and a sherbet like tartness. I call this wine a Lune Croissant because of its endless layers and flavour but also its ability to be light as a feather on the palate whilst never lacking in depth, magic trick of a wine."
