From the Willow Grove vineyard. A north facing hill of red volcanic and grey dermasol soil.
Planted in 2001, own rooted, unirrigated vines.
Wild fermented in 400L puncheons.
Went through a slow but full malolactic fermentation.
This fruit has partially pulpy berries which leads which leads to heaps of solids in the ferments that in turn builds heaps of texture into the finished wine.
On the nose the wine has lemon, pistachio, custard apple, pineapple and some oyster shell salinity.
On the pallete the wine is structured, powerful but restrained. Heaps of texture, with lemon pith, more salinity and some sourdough yeasty character
