Lime blossom, honeysuckle and jasmine are met with Calippo sorbet like aromas. Fresh fennel bulb, lemongrass and a distinct white pepper powder as well. The acidity is held in restraint without the hardened edge. Chalk and blue stone are followed by a savoury cucumber, radish and lemon thyme note. There is a real story over the palate here. Its array of fruit, florals and herbs make for complex drinking. A lovely pairing would be with smashed cucumber, wakame seaweed and black sesame or equally a salad of garden peas and herbs. The late Tom Kies conceived the concept of Dead Man Walking. Tom's life philosophy revolved around avoiding procrastination, putting things off, or leaving them until it was too late. Despite being blessed with extraordinary winemaking abilities, a deep love for wine, and an immense zest for life, the development of this brand and the initial release of its wine in 2016 were integral aspects of his valiant but ultimately unsuccessful nine-year battle against colon cancer. In their role as devoted family friends, the Hughes family of RieslingFreak fame have taken charge of Dead Man Walking, assuming the responsibility of carrying out Tom's winemaking mission. They have also embarked on the noble endeavour of funding the education of his two sons by allocating a portion of the proceeds from each bottle's sale into a trust.
