Boudin is a traditionalist, you won’t find a skerrick of oak here, instead, he favours purity. Yet, the wines are far from bracing and angular as many in this camp produce. Nor are they overtly rich and unctuous as those from the opposing camp, who indulge in picking ripe and using oak treatment to build texture and richness.
Instead, Boudin relies on his prized old vine material, careful vineyard management and judicious lees work to instil intensity and texture in the wines, while still maintaining Chablis’ prized mineral blueprint and the requisite freshness. - Importer note
