Vermentino on skins - peach, iced tea and super refreshing
From the Gullyview Vineyard, Watervale which was planted in 2007, a soil type of Terra Rossa, red clay on limestone.
Picking dates were March 18 & 21, 2023 with the fruit hand harvested and sorted in the vineyard before de-stemming, retaining ~50% as whole berries and no whole bunches.
Fermentation was a natural ferment in open-top steel fermenters, during which hand plunging occurred twice daily for a total time on skins of 20 days.
At pressing both free run and pressings were combined, then allowed to settle off gross lees for 7 days and aging in stainless steel for 7 months before bottling with no filtration and no fining.
