Semillon on Chenin Skins

Margaret River, Western Australia

Wilyabrup Semillon given skin contact overnight with our Chenin to add a layer of chalky texture. Wild fermented with solids then aged on fine lees in tank. Bottled without fining or filtration. Fragrant, lemon curd & elegant. - Winery note

Gently floral opening, understated. Jasmine, cucumber water with lemon, tonic and salty base. Pomelo and lime leaf. All is fine and smooth. Flinty undertones follow on the palate. Light and refreshing as a drink can be. Little phenolic lick in texture, I guess from that overnight affair on skins. An interesting merge of varieties.
