It's medium in weight and classic in style, in that blackcurrant, mint and choc flavours are the main drivers, but there's attitude here, too, most of it via complex herb and tobacco-like notes, though the wine's 'natural' free-flowing feel is also a key aspect. This wine does not lack flavour and yet it feels like a drink rather than a meal, if that makes sense, with this level of refreshment. Soil type: Red clay on limestone, 'Terra Rossa'

Picking method: Hand harvested and sorted in vineyard

Processing: Destemm retaining ~ 50% whole berries, no whole bunch

Fermentation: Natural ferment in open top steel fermenters, hand plunged twice daily

Aging vessel: Slavonian foudre for 9 months, then racked to steel for 3 months

No filtration, no fining Alc: 13.1% 

Production: 890 dozen
