Aged 20% in concrete eggs, 15% in stainless steel tanks and 20% in used French oak barrels for 10 months
Made in collaboration with Jean-Marc Roulot and produced from 40-year-old vines in mineral soils with alluvial stones covered in calcaire. The wine is intense and energetic, high pitched and lively, round and austere, refined and mineral. It has a dry mouthfeel and a saltiness natural to the area. - Winery note
"This has a complex yet refined nose of sliced apples, peach pits, smoked almonds, wet stones, chalk and white pepper. Hints of beeswax, juniper and cedar, too. It’s medium-bodied, elegant and light-footed, yet powerful, too. Creamy layers of stones and stone fruit slowly evolve to blanched almonds and nougat. Very long and precise. Try this from 2024. "Apple, white peach, a slight smokiness, almonds, a dusting of white pepper, fennel and green herbs. It’s flinty and tight, fine chalk dust texture, smooth and saline, a gentle creamy nougat glossiness, and the finish is very long with a flinty texture, and subtle bitterness.
