”From Woori Yallock's single Primavera Vineyard, at 220m elevation on clay loams, planted in 2008. Puncheons, new and used. Wild fermented coolish (25 deg.) with no adjustments other than sulphur. Bottled without fining or filtration. Impeccable texture. Nothing astringent or puckering, despite the low alcohol. Just a rummaging field of gently applied oak, bright juicy acidity and a little chew. All about texture. Stone-fruit scents, dried straw, nashi pear and wasabi. I'd prefer some mlf to fill out the middle, but a lovely drink.”
